Spirit Showcase: Brugal Rum

Located in Puerto Plata, Dominican Republic, the Brugal Family has been producing rum for about 130 years. The secret family recipe has been carefully handed down over the past 5 generations. The rum is twice distilled and aged for a minimum of 2 years.
2 oz. (6cl.) Brugal Añejo
4 oz (or 12cl.) Lemon-lime soda
¼ oz (1cl.) Fresh lime juice
Wedge of lime 
Twelve Cocktails System:
#2: Highball Category  
Base Spirit
Non Alcoholic Mixer
Ice

 

 

Build by pouring the Brugal Añejo, into a tall glass over ice.

Add the freshly-squeezed lime juice and top with chilled lemon-lime soda.

Stir.

Garnish with a wedge or wheel of lime.

Why do we strain a cocktail over fresh ice even though it was already shaken or stirred over ice? Is that really necessary:
It is a very good practice to strain over fresh ice. With new fresh ice, the dilution rate is slower and the cocktail stays colder longer.

Do I really have to stir a highball after adding an effervescent ingredient in it in order to mix it well?

When making Highballs, its important that you stir. Even though you are pouring ingredients on top of each other (Including effervescent ones) it does not mean they mixed themselves to perfection. A quick stir will mix everything evenly.
